Nutella Stuffed Cookies

Nutella Stuffed Cookies are made with homemade peanut butter cookie dough stuffed with creamy chocolate hazelnut spread. The dough is rich with peanut butter, and the cookies bake up soft and chewy.

Ingredients
  

  • 1 cup butter room temperature
  • 1 1/2 cups granulated sugar divided
  • 3/4 cup brown sugar
  • 1 1/2 cups creamy peanut butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup Nutella

Instructions
 

  • Beat butter, 1 cup granulated sugar, and brown sugar until light and fluffy.
  • Beat in peanut butter, eggs, and vanilla until smooth and combined.
  • Mix in flour, baking powder, baking soda, and salt on low until the dough comes together.
  • Cover and refrigerate for 1 hour.
  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • Scoop dough with a large cookie scoop.
  • Flatten dough, add about 1 teaspoon Nutella to the center, seal the dough around the filling, and roll into a ball.
  • Coat each dough ball in the remaining 1/2 cup granulated sugar.
  • Place cookies 1–2 inches apart on the prepared baking sheet.
  • Bake for 13 minutes, or until lightly browned around the edges.
  • Let cookies cool on the baking sheet for 15 minutes, then transfer to a wire rack.

Notes

For extra large cookies, use 2 large scoops of dough per cookie. Flatten one scoop, add Nutella, flatten the second scoop, place it on top, seal the edges, and shape into a ball. This yields one dozen extra large cookies and requires a 15-minute bake time.
